Anarash Curry 

(Pineapple Curry)

 

Time required: 20 minutes

 

Ingredients

  • 1 medium sized ripe pineapple 

  • Oil for cooking,

  • Onions 2 (100g.)

  • Chopped 1 stem of lemon grass

  • A few sprigs of curry leaves

  • 11/2 cups (360ml) thick coconut milk  (extracted from ½ grated coconut)

  • 1tsp. (5 g.) mustard powder

  • 1tsp. (5 g.) cinnamon powder

  • 6 dry red chilies, powders

  • A pinch of turmeric powder

  • Salt to taste

  • 1 tsp. (5g.) fennel seeds, roasted and powdered

 

 

 

 

Preparation

 

Clean, peel and dice the Pineapple.

Heat oil in a pan and fry half the onions, lemongrass and curry leave still the onion turns brown. Add the remaining ingredients, except the fennel powder and simmer till done. Sprinkle the fennel powder and remove from heat. Serve hot with rice.
